Fish fillets, I used catfish
diced mango
diced pickled banana peppers
1 tsp chopped green onion
half a shallot, diced
1 1/2 inch of leek, diced
tsp smoked paprika
tsp ancho powder
1/4 cup cornmeal
tbs butter
tsp Worcestershire sauce
Dredge the fish in the cornmeal. Briefly sauté the leek and the shallot in the butter. When they begin to caramelize, add the fish and sprinkle with the paprika and ancho powder and drizzle with the Worcestershire sauce.
Mix the mango, banana peppers and green onion together as a relish.
When the fish is cooked, top with the relish and serve with rice or pasta.
